getting ready to run all new cables in my boat. Question is since it was a complete rebuild there was no cables in it to start. should the cable be secured every so often through the boat or just at the connection points?

Tahiti, on my old 73 18' Tahiti the cables and wiring harness were hung loosely under the left hand gunnel. They were supported in 3 spots by some heavy cardboard tubes about 2-3 inches in diameter that were about 6 inches long. These were glassed to the gunnel underside. You should be able to ad lib something similar.

My '76 18' Tahiti has the reverse cable under the left hand gunnel and the accelerator and place diverter cables run on the floor. Crude, but effective.

In light of BBTAHITI's post, I guess I should clarify that it was my steering cable, shift cable and wiring harness that ran under the gunnel. My throttle cable was routed along the floor and under the seat base.
