Probably going to be a tough call.
If it were me and you are willing to do the tuning with caution, I would jet up about 4 numbers front and rear from exactly what the carbs came with stock.
Then I would do a pyrometer (such as Computech and others have) and get an exhaust temp reading. Combine that with plug readings and some 1/2 track passes and see where you are.
Aside from that...you could send the carbs to a known shop that can recalibrate and boost reference the carbs for you. There is one such shop here in Reno but he is about 4 weeks behind.
But in the end you will still have to tune it as a lot depends on your engine combo and blower.
