Actually, there is nothing wrong with using wood as long as it is bonded well to the hull and covered completely in glass. I have done several from building strakes to extending existing ones in this manner with no failures. I will agree that a foam of some kind would be a great idea as well. What ever you use needs to have some level of flexibility, however, or it will be likely to crack and eventually de-laminate.
Also keep in mind when shaping your cores, to make them undersized so as to leave room for the fiberglass, body filler, and paint or gelcoat in your finished size.
