I think it's because there are only certain numbers it can work out to. Then, they rotate the symbols to seem random.
3,9,18,27...etc.
Concentrate on the same (correct number) everytime and you'll see what I mean.

You are on the right track. It has everything to do with math. Each time you think of a number there are only a finite number of answers. The symbols changed each time so no matter what numbers you pick, it reads your mind, mathematically.
