View Full Version : Where to buy a Texas Barbque?

For years I have been grillimg / cooking out side with a Santa Maria style barbque, mainly tri-tip, chicken and ribs (both beef and pork). Also sausage and Linguisa. I usually cook over red oak from the Santa Barbara and Lompoc area.
My brother and I are considering going into the Texas style barbqueing competition arena. It is realy smoking meats which is totally diferent from the Santa Maria grilling we have been doing. The guy who makes my custom Lompoc grills, which by the way each can cook 75 pounds of tri-tip at one time....is not experienced at building Texas style smokers.
I have found a guy on the internet that is like the guru of Texas style smokers..but of course he is in Texas.
Do any of you guys know of a west coast fabricator of barb's that knows how to make smokers of competition quality? I want one that has all the right baffels to regulate heat and smoke. One with a seperate fire box that can double as a steak grill and one with an up right box to hang ribs and sausages. Should be able to feed at least 100.
If so any advice would be greatly appreciated.
