My buddy had a 29 but had a big built motor that broke 2 times, lots of $$$ to repair. Go with the Merc. I rode in his boat and it ran smooth at 90.
I talked to my buddy after I made the post above and he doesn't think a single engine Merc would get the boat the speeds that he was getting with his built motor.

Seems to me that my 29' open bow force with a 572/725hp ran the best of 82 mph, but just try'n to go off memory.
