Keep in mind that it's So. Cal...if you plan on traveling anywhere after 2:00 p.m. - plan on sitting in some traffic. Not trying to discourage, only giving you a heads up for calculating travel time.
My inlaws from New Zealnd/England always get pissed beacuase they plan these really busy itenerararies, but never compensate for traffic time and then they miss some of their stops.
A trip tp the indian casino near Hemet is a cool 2 hour hour trip each way, without a lick of traffic.
Sticking to OC is nice, lots to do.

Thanks for all the info. Is Santee Alley a good place to go bargain shopping and is it safe to go down there?

Ah, the garment district in downtown. It's safe, you're not going to get mugged or anything, at worse you will have to deal with mega pandhandlers and the stench of urine.
The garment district is pretty neat, tons and tons of places to go though, you should definitely have a plan of attack. Make sure you find a parking lot, as opposed to a meter.
Pershing Square is also in downtown and the jewelry district is right there. From Pershing square you can catch the metro rail subway up to Hollywood, the Kodak Theater area is really nice now (it used to be an armpit but we stayed there for the LA Boat Show and I was impressed with how much they renovated the area). I think the rail also goes to Universal City Walk? You might verify that info first.
    What else ya wanna know?

There is also a "LOCAL DASH BUS" that cost .25 I think there are 3 of them that can get you all over downtown LA ,China town to the Colisum and I think they run every couple of minutes. The new GOLD line runs to Pasadena Old town thats also nice for having lunch !

We are planning on renting a car. Would a person be able to check out Venice Beach & Santa Monica Pier then take a drive through Beverly Hills and Hollywood all in one day?

Yes, all those areas are still in the mteropolitan area. Universal is only 5 minutes away from Hollywood is you squeeze that in too.
Venice during the summer is kinda cool for a little while...that's a pretyy tough area. Not sure about the winter though..will be cold and not much action on the beach (unless there is something I don't know about). Cholo's/lowriders rule the roost there..personally I feel safer with homeboys in souh central. Be careful there.
Santa monica pier is cool, you have the 3rd street Promenade in Santa Monica, or you can even cruise up the coast to Malibu.
Beverly Hills...you going to check out Rodeo Drive, or star homes? That's kinda cool too. If you are in Beverly Hills, it's real esay to jump onto Sunset Blvd and go into Hollywood.
Downtown LA at night, during zmas is spectacular looking, all the big bldgs are lit up in green/red.
